If you have never tried to make homemade ice cream, you may be surprised to learn just how easy it is to make. Even without any specialist equipment, such as an ice cream maker, it is easy to make this delicious frozen treat.

Ice cream is a generic term used to cover a wide range of frozen products, many of which do not contain cream. It is generally sweet, though savory flavors can be made, and is commonly used as an accompaniment to desserts, or as the topping for an ice cream cone.

The secret to making ice cream is to use good quality ingredients. You may need to use stronger flavors, or greater amounts of an ingredient than you would if you were making a non frozen product. This is because eating something cold makes your taste buds go slightly numb. For the same reason frozen products generally carry a higher sugar content than non frozen ones, as when frozen they do not taste quite as sweet.

The Best Way to Make Homemade Ice Cream

The best way to make homemade ice cream is to use an ice cream maker. These are widely available, easy to use, and can do in around 20 minutes something which would take hours in a freezer. Most ice cream makers consist of two parts. A bowl, which is kept in your freezer compartment when not in use, and a stirring mechanism which speeds up the freezing process by keeping the mixture in contact with the sides of the bowl.

If you do not have an ice cream maker then it is still possible to make homemade ice cream. To do this you place the mixture in a container in the freezer, then stir it manually every so often to prevent it from forming into a solid block of ice. There are also ways to make homemade ice cream using plastic bags.

If you have not made ice cream before the best thing to do is find a good ice cream recipe to follow. Recipes are widely available on the Internet, or can be found in many cooking magazines or books. They range from the very simple, which may contain only three ingredients, for example chocolate, cream and sugar, to more complicated recipes such as a traditional vanilla ice cream which involves making an egg custard from scratch.

Ice cream does not have to be unhealthy. A great way to make quick and healthy versions of this frozen treat is to use fruit smoothies as a base. Simply make your smoothie as normal, then pour into your ice cream maker. You may find you need to add more sweetness, but if you do not want to use sugar for this you can substitute honey.

    The obvious choice is HD! Modified milk ingredients were not even allowed to feed livestock 20 years ago, but now you find it everywhere! I always check but it is becoming harder to find cheese, yogurts and icecream without modified ingredients. Breyers ice cream also has a gross after taste (maybe from the less quality ingredients?). So for me, I'm going to say HD all the way!

  35. I'm from the United States and I'm having a hard time with this question. I think this country primarily gets inspired by cuisine from other countries and then attempts to replicate it for a mass audience. Consequently, it frequently ends up being a less impressive version of the original because the profit motive generally wins out over quality ingredients and technique.

    That said, the earliest food in colonial America was British, adapted to available ingredients. So, if asked I'd have to go with chowder, brown bread, baked beans and pies- colonial cuisine.

    Good idea about spreading on the cookie sheet and cooling in the freezer, if you don't have a large supply of ice (or icemaker). However, this may warm up your refrigerator's freezer compartment, increasing the time it takes to freeze the greens after they are packaged. Better to put the greens in the deep freezer when packaged to ensure speedy freezing. Also, the greens may be blanched, or steamed, for 3 minutes, followed by cooling in an ice water bath for the same amount of time.

    Hi sunnekalb! An ice cream maker is really the best way to go, and there are several good inexpensive ones on the market (some even under $25). But- if you must have ice cream and don't have a machine you could always try freezing the mix for about an hour, and then pulsing it gently through a food processor and then refreezing it. It won't be as good but hey, a craving is a craving right?

    I have a question to which I legitimately don't know the answer.

    First, I am a new parent of baby girl (Abigail) who started life as an embryo that my wife and I adopted (we don't know the parents to this day). Since a part of the process is at the root of my question, let me tell you a piece of our story:

    We adopted 5 frozen embryos from the biological parents. They were frozen (as is customary) in 'strips'- one strip had 3 embryos on it (the one we thawed), the other has 2 (still 'in the freezer').

    Of the 3 embryos we thawed, 1 died as part of the thawing process. It's my understanding that when a frozen embryo dies at this stage, the root cause is actually imperfections in the outer cells that get exacerbated by the freezing process. (They actually get irreparably damaged as part of the freezing process, we just don't know about the damage until thawing).

    This left us with 2 to implant. One took hold and grew into Abby, the other died/was passed 'naturally'.

    My understanding is the these statistics are perfectly in line with broad-based averages: 33% die during the thawing process; 50% of those left die/pass/miscarriage after being implanted; the rest are born 9 months later.

    Finally, my question: Has my immediate desire for children contributed to putting the embryos (kids) in my charge at additional risk?

    What if, in the future, a thawing process is discovered that kills less than 33%? What if there are fertility drugs discovered that increase the odds of implantation to something greater than 50%?

    Now I am operating under the assumption that the embryos can remain in a frozen state indefinitely (e.g. a woman in Israel recently delivered twins from a 12 year old frozen embryos). So is leaving the embryos frozen for now the safest course of action FOR THEM?

  51. Well, I guess you can't do any refrigerated or frozen products…which is a shame because their tart and tangy frozen yogurt is so friggin good.

    Also, their 2-buck Chuck is fab cheap wine, but I doubt you want to bring bottles of wine back with you.

    But, my other TJ's favs are their almond butter (I hear the almond butter with flax is awesome, but I haven't gotten to try it yet). Their pumpkin pancake mix (though, that's likely not in season now). OH and their vanilla Joe-Joes.

    and I'll tell you what one of my teachers in Enginnering said to me after we started visiting food processing plants: “if people were completely aware of what goes into the packaging/canning of their food they would stop eating it all together” she also told me that you have to understand the level of risk you take.
    I personally don't buy that much canned food, for sure I rarely buy canned vegetables (thor, actually frozen veggies are way healthier than canned if you are worried about chemicals). what I normally buy canned is tomatoes (any form), olives, mushrooms. The rest I try to buy either dry (beans, lentils, rice) I buy oatmeal in bulk (it's cheaper and not packaged). I'm aware of what is in those cans and I'm ok with consuming those products.
    Frozen vegetables are great cause they need no additives to stay preserved, the freezing process takes care of that. I do buy a good amount of frozen vegetables for anything that will be cooked.
    and the rest I buy fresh… but we don't buy that much, I try to not buy anything that we will not eat in the days ahead otherwise I know most likely it'll go bad without eating it.

    A leading Israeli supplier of warplanes used to kill and maim civilians in Gaza is in the running for two new scientific research grants from the European Union.

    When is enough weapons enough?

    Israel's attacks on Gaza in late 2008 and 2009 provided its air force with an opportunity to experiment with state-of-the-art pilotless drones such as the Heron. Although human rights groups have calculated that the Heron and other drones killed at least 87 civilians during that three-week war, EU officials have tentatively approved the release of fresh finance to the Heron's manufacturer, Israel Aerospace Industries (IAI).

    Two projects involving IAI have recently passed the evaluation stages of a call for proposals under the EU's multi-annual programme for research, which has been allocated 53 billion euros (65.4 billion dollars) for the 2007-13 period.

    The Union's executive arm, the European Commission, has confirmed that IAI is one of 34 Israeli “partners” involved in 26 EU-funded projects for information technology which are under preparation.

    Among the other Israeli firms being considered for such funding are Afcon, a supplier of metal detectors to military checkpoints in the occupied Palestinian territories, including the Erez crossing between southern Israel and Gaza. Afcon was also awarded a contract in 2008 for installing a security system in a light rail project designed to connect illegal Israeli settlements in East Jerusalem with the city centre.

    Mark English, a Commission spokesman, said that the procedures relating to the projects have not yet been completed. But the Israeli business publication Globes reported last month that Israeli firms stand to gain 17 million euros from the latest batch of EU grants for information technology. According to Globes, this will bring the amount that Israel has drawn from the EU's research programme since 2007 to 290 million euros.

    Israel is the main foreign participant in the EU's science programme. Officials in Tel Aviv say they expect Israeli firms and research institutes will have received around 500 million euros from the programme by the time of its conclusion.

    Chris Davies, a British Liberal Democrat member of the European Parliament (MEP), expressed anger at how the Commission's research department appears willing to rubber-stamp new grants for Israeli companies. Such a “business-as-usual” approach is at odds with tacit assurances from officials handling the EU's more general relations with Israel, he said.

    In late 2008, the EU's 27 governments agreed to an Israeli request that the relationship should be “upgraded” so that Israel could have a deeper involvement in a wide range of the Union's activities. But work on giving formal effect to that agreement has stalled because of the subsequent invasion of Gaza.

    Approving EU finance for Israel Aerospace Industries “should be regarded as utterly unacceptable, incoherent and outrageously naive,” Davies told IPS. He argued that there appears to be “no communication” between different sets of EU representatives on how Israel should be handled. “Where's the joined-up thinking?” he asked.

    While the European Commission claims that all of its scientific research cooperation with Israel is civilian in nature, the Israeli government has been eager to publicise the almost umbilical links between the country's thriving technology sector and its military. A brochure titled 'Communications in Israel' published by its industry ministry earlier this year refers to a “symbiosis” between the security and technology sectors in Israel. Several technology breakthroughs – such as the invention of voice recognition devices for computers by the Israeli army in the 1980s – have resulted from this “convergence”, the brochure claims.

    Other likely Israeli beneficiaries of the new round of EU funding do not conceal how they have benefited from this convergence either. The Israeli subsidiary of SAP, the software manufacturer, has issued publications about how it has provided specialist equipment for the Israeli army. And both Emza and LiveU, two “start-up” companies, are examples of the numerous makers of surveillance equipment in Israel that have seen their order books fill up since the country tried to position itself as an indispensable part of the “war on terror” declared by former U.S. president George W. Bush.

    Marcel Shaton, head of the Israel-Europe Research and Development Directorate (ISERD) in Tel Aviv, said that EU citizens should not have any qualms about financing Israeli arms companies. “All research supports the arms industry,” he said. “Non-military technology is used for military purposes all over the world.”

    But Yasmin Khan, a specialist on the arms trade with the anti-poverty group War on Want, said that the EU has been complicit in the occupation of Palestine through its support for Israel's military industry.

    She noted that drones made by IAI and other Israeli companies have been bought by several European countries taking part in the U.S.-led war in Afghanistan. “The military industry is a central point of the Israeli economy,” she said. “The equipment it makes is sold as 'battle-tested', which is a dark way of describing its use in the occupied (Palestinian) territories.”

I once helped my parents select a fridge by using a simple method–standing at a distance and identifying the one with the smallest freezer compartment and (therefore) the largest fridge compartment. As we had a separate chest freezer of adequate capacity, every cubic inch that was in the fridge compartment rather than the freezer compartment made the unit that much more useful.

    A competing theory would be that people actually use less frozen food (and particularly less long-term “deep frozen” food); fewer people therefore have freestanding freezers. So people need slightly bigger freezer compartments in their refrigerators, since that's all the freezer they have.

    Lately there seems to be a move towards freezer-on-bottom units; those are probably the best in terms of making the fridge easy to access.

Then I read an article that said that the overly saachranized soda “dulls” your taste buds and affects how you taste food.     Happy Birthday, Tony! Since you're not close enough for me to run this over to you with a slice of cake, I'll just give you my candied ginger ice cream recipe (sorry I don't have quantities–but you're a great cook, so you'll get it!):

    Make a simple syrup, adding fresh ginger slices to the pan to infuse as it's cooking. Using your favorite vanilla ice cream recipe, omit the vanilla and add some ginger syrup instead.
    Chop up candied ginger chunks to your taste and add to the ice cream mix, then make it up in your ice cream maker.
    Since it's your birthday, drizzle on some very dark chocolate sauce and have a double bowl!

    This was my grandmother Hazel's old recipe who will be chuffed shes on the internet. I stumbled upon it when I was searching through her lovely hand written cook book for her Anzac biscuit recipe, a childhood and not so childhood anymore favorite (which I look forward to you making, hint hint).

    This particular recipe my nan had never cooked for me, and it sounded yummy as I happen to like both pumpkin and scones! I would say that as a first recipe it was a great success and the poppy seeds really added to it nicely. I can't help thinking of the wicked witches “poppies, poppies will make them sleep”.

    With a little butter and some warmth from the microwave they were very homey, making me want to curl up and read a book with some tea. Taste wise, they had a little bit to much nutmeg (or possibly cinnamon), and due to not enough kneading they had little clumps of flour strewn about the place inside them, but overall the mix between sweet and savory flavors was a welcome surprise. One I am defiantly revisiting tomorrow with my breakfast.

    TL;DR: Yummy scones, little to much nutmeg and some flour clumps, but great taste with mix of sweet/savory flavors.

  133. I was in the group that focused on eliminating plastic bags. I find this very important. Production of plastic bags uses a good chunk of our oil supply and emits harmful toxins into our environment. Six of the seven most harmful toxins in the world are found in plastic bags. Also, it takes thousands of years for plastic bags to photodegrade, which means they only break down into smaller, still-toxic pieces. Plastic bags also kill many animals that mistake the bags for food. I think the cloth bags should be one per person, and people can buy any additional bags. If we were to give people free bags whenever, they wouldn't ever remember to bring their old bags, so they'd just go to waste.

    I have the 1930's version of the same stove, but have never had any such problems. Back in the 1920's and 30's appliances were made to last forever. And my 1930 General Electric refrigerator (uses almost no electricity since frost builds up on the freezer compartment and the refrigerator becomes an icebox, hardly ever turning on the compressor), my 1930's stove (I can turn off the pilot light when not in use so doesn't use a bit of natural gas when not in use, except in the winter I like to leave the pilot on since it heats the burner fold down cover and the cats use that for a heating pad to sleep) and my 1930's two slice toaster which functions wonderfully and is Art Deco styled. Even the stories you see occasionally about the old carbon filament light bulbs still working continuously since the 1920's in a pub in London or a fire station in some small town is actually not news, as the old carbon filament bulbs with the tit on the top (from how the glass was blown back then) never burn out, the only problem is they don't provide a lot of light and they burn relatively warm, using too much energy, but you can make any light bulb last forever by putting a bulbsaver disk (available from hardware stores) inside the socket of any bulb; it will glow somewhat dimmer but will last a lifetime. In the old days manufactured things were built to last forever, but tastes and methods change.

    Italian-American cuisine is far more rich than Italian cuisine in Italy. This blanket of melted cheese is one of my pet peeves. For the same, cheap restaurants in Italy drawn everything in layers of cream. I believe this is done to mask the poor quality of ingredients.

    I am for naked food, good quality ingredients need no blankets!!!

    Hiya Brett. I feel for you, really. In my experience with chickens, the hot-water bath helps but it's only marginally helpful. You still need to pluck, I mean really pull, to get those feathers off. So yeah, I dry-pluck my turkeys and the bantam roosters; I have them hung up and not in my lap (though I have done that too) but hanging them by the feet works best for me. As long as their bodies are still warm (which obviously won't be the case if you're pulling them from the freezer!) it's easy? not as hard? to do as when they're cold. But also from my experience, the freezing process allows the feathers to release fairly well too. And I singe off the little hairy feathers (rolled-up newspaper). So, indeed, tedium. Like shelling peas. Lots of effort required.

    Just thought I'd give an update; I followed those directions as close as I could (I mashed it up twice, because I realised the first time I did it, it wasn't really hard enough), and man, it turned out great! Right after blending up the frozen sorbet, it was a little too mushy, but after an hour or two in the freezer; delicious! I do not have an ice cream maker to compare this to, but rest assured, if you don't own an ice cream maker, you can still make delicious sorbets! (note: I only had four kiwis, so I just cut all the proportions in half for the recipie, and followed the directions on the site I posted above [the strawberry sorbet directions], eg., boiling the syrup, then reducing heat and simmering the syrup for five minutes). Good luck making your own sorbets!

But I let it set for a while and it solidified. But there's like two layers, the top one looks like your pie and the bottom looks a little liquidy though. Still good!

    Hiya Brett. I feel for you, really. In my experience with chickens, the hot-water bath helps but it's only marginally helpful. You still need to pluck, I mean really pull, to get those feathers off. So yeah, I dry-pluck my turkeys and the bantam roosters; I have them hung up and not in my lap (though I have done that too) but hanging them by the feet works best for me. As long as their bodies are still warm (which obviously won't be the case if you're pulling them from the freezer!) it's easy? not as hard? to do as when they're cold. But also from my experience, the freezing process allows the feathers to release fairly well too. And I singe off the little hairy feathers (rolled-up newspaper). So, indeed, tedium. Like shelling peas. Lots of effort required.

    Hmm… 2lbs of dry ice per cu.ft.? guessing that an average freezer in a 25 cu.ft. fridge is about 10 cubic feet, so 20lb of dry ice to keep food frozen for a couple more days? “Energy star” anyone?!

    Nagging aside, add some dry ice on top shelf of the fresh food section also: cool air(and CO2 released form dry ice) will sink to the bottom of the fridge cooling down your food on all shelves more or less evenly.

    The usual methods for freezing vegetables just work for watery crops like zucchini. Even if blanched first, the freezing process breaks down the structure of the zucchini cells, creating a limp, watery, flavorless mess. But a method Julia Child uses for dishes is easily modified to create perfect, recipe-ready zucchini.

    how it works:
    Cut off the stem and end of the zucchinis and weigh them. Grate them using the medium disk of a food processor or a hand grater. Place the grated squash in a large strainer or a colander with small holes. For each pound, sprinkle with 1 teaspoon of salt and mix well.

    Let the zucchini drain for about a half hour. Then press it firmly against the sides of the vessel to squeeze out as much water as possible. The salty liquid can be discarded or saved for making soup. Then remove the zucchini one handful at a time and squeeze until as dry as possible. to get out as much water as possible. There should be about one rounded cup of shreds for each pound of zucchini.

    Press shreds into a measuring cup one cup at a time, then place each cupful onto a piece of waxed paper or plastic wrap about 18″ long. Press the shreds into a square 8″ on a side, then fold the paper or wrap around the flattened square. Place the squares onto cookie sheets and put into the freezer. After they have frozen, the squares should be stacked into plastic freezer bags.

    Cooking with Shredded Zucchini:
    Each square represents one pound of fresh zucchini, all ready for use in any number of dishes, from zucchini bread to soup; just adjust the quantity of salt, as the shreds will be presalted.

    The other day I saw very small fridges with a small freezer at Sears, comparable to ours. I think they were labeled “Studio-fridges”. Also when I asked out of interest about the only washer-dryer they had where both functions were combined in one machine, the sales rep advised me against buying it because it is small – if you have the space, why would you buy a small one when you can have a big Bleak.
